Lion's Mane Chocolate Chip Cookies

Your daily dose of lion’s mane… but make it a cookie 🍪✨

Lion’s mane powder is a versatile alternative to capsules. It can be added to coffee, tea, smoothies, soups, even baked goods! 🧑‍🍳

These lion’s mane cookies are simple, gluten-free, refined sugar free and can be made vegan too 🌱 This recipe works out to approx 2.5 grams of lion’s mane per cookie 🤯

To make these chickpea & lion’s mane chocolate chip cookies:

Wet ingredients

1/2 cup coconut sugar
1/2 cup coconut oil, melted and cooled
1 egg, at room temperature (see below for a vegan version!)
1 egg yolk
1 teaspoon vanilla extract

Dry ingredients

1 1/4 cup chickpea flour
1/4 cup lion’s mane powder
1/2 teaspoon baking soda
1/2 teaspoon salt

+ chocolate chips as desired (we used a 1/2 cup - dark or semi-sweet work best with this we found, but up to you!)


Directions

Preheat oven to 350. Mix wet ingredients and dry ingredients separately, then combine, finish by adding chocolate. Scoop/form into 12 cookies. Lightly press down with a fork. Bake for 10 minutes. Let rest 5-10 before enjoying!

Vegan option: replace the egg with flax egg! (1 tablespoon flaxseed + 1/4 cup water. allow mixture to sit for 5 minutes before using)
